Hey friends! Life has been a bit hectic with end of the school year activities the past couple of weeks. Hence the radio silence here on the blog. But, the boys finished their last day of school today and as I sit here typing this I have a house full of neighborhood kids yelling from one room to the other. Ha! Summer is officially on, you guys!

While I don’t do it as often as I used to, I love stopping at local outdoor produce markets to pick up what’s in season. Oh and hey, I mentioned a week or so ago here about starting a little raised bed veggie and herb garden and I’m thrilled to report that I have the best smelling sweet basil and rosemary around! AND we have nearly a handful of new cucumbers coming in! So fun watching them grow!

There’s just something kinda therapeutic about perusing a market stand with the country tunes streaming through the speakers and the wind breezing through your hair. Ahhh…I need to make another pit stop soon. Ha!

I left with some limes to go in my soda water and some mangos to makes some fruit salsa. If you follow along with me over on Instagram, you may have seen the recipe I shared. If not, I’ll share it here for you guys. It would be perfect for a Memorial Day get together!

 

FRUIT SALSA

FINELY cut up your choice of fruits. I use apples, both sweet and tart ones, a kiwi, some strawberries and mangos.
You can add some zest from a lemon if you want a little tart punch.
Mix that all together with 3 tablespoons of any flavor fruit preserves, refrigerate and let it all marinate.
Serve with Stacy’s cinnamon pita chips or make your own cinnamon chips here.

Easy peasy, lemon squeezy. (Had to be done, sorry!) Ha!

Hope you have a wonderful and safe Memorial Day weekend! Let us not forget all the men and women who have fought and continue to fight for the freedoms we get to experience each and every day. While we tend to think of Memorial Day as the official start to our summer with lots of food and fun, it’s a day intended to remember and honor those who have lost their lives fighting for our country. So, my hope is that we are sensitive to those who are struggling with such loss and show them some compassion and appreciation.
